Pork Fried Rice
- Oil
- 1 medium brown onion
- 2 cloves garlic
- 2 teaspoons of grated fresh ginger
- 300g of pork mince
- 1 stick of celery
- 1 large zucchini
- 4 cups of rice
- 90g of frozen peas
- 60 ml [¼ cup] soy
- 2 spring onions
serves 4 1527 kj/365 cal
Method
Heat oil, add onion ginger and garlic stir fry till onion has just softened. Add pork; stir fry till cooked through
Add Vegetables, till hot and cooked.
Add spring onions.

Sangria
- 1 Bottle of red wine (Cabernet Sauvignon, Merlot, Rioja, Zinfandel, Shiraz)
- 1 Lemon cut into wedges
- 1 Orange cut into wedges
- ½ cup sugar
- Lemonade, 1 litre
- 2 Cinnamon Sticks
- Ice
Method
Add sugar and water together and slowly bring to the boil.
Add fruit.
Add Wine.
Pour in Soda or Lemonade
Add Ice and allow to cool
Drink; carefully!

Chicken & Lentils & Spinach with Pasta
- 2 Teaspoons Vegetable Oil
- 1 Small brown onion [chopped finely]
- 2 cloves garlic, crushed
- 150g Minced chicken
- ½ Cup [100g] red lentils
- 2 ¾ Cups [680ml] chicken stock
- 2 Tablespoons tomatoes paste
- 250g Baby Spinach leaves
- 375g Shell pasta
Method
Heat oil in medium pan; cook onion and garlic, stirring until onion softens. Add chicken; cook, stirring, until chicken has changed in colour. Stir in lentils, stock and paste; simmer uncovered, about 10 minutes or until lentils are tender & sauce thickened. Add spinach; stir spinach; stir until spinach is just wilted.
Meanwhile cook pasta in large pan of boiling water, uncovered, until just tender; drain.
Combine pasta and chicken sauce in large bowl; to mix, toss well.
Serves 4

Chow Mein
A quick and tasty filling meal.
Ingredients
- 500 g mince meat
- 1 packet chicken noodle soup
- 1 cups boiling water
- 2 tablespons curry powder
- 3 tablespoons soy sauce
- 3 tablespoons tomato sauce
- ½ cabbage, shredded
- 1 cup beans
- 2 small onions, sliced
- 1 carrot, diced
- 1 stick of celery
- 200gms of Mushrooms
- small can of pineapple
Method
Brown the mince in a large pan.
Add water and soup, and bring to the boil.
Add cabbage, cook until, soft.
Add all other ingredients and simmer until vegetables are tender.
Drain can of pineapple.
Add can of pineapple last, before serving.
Serve on a bed of rice

Chile Con carne
A real Winter warmer
Ingredients
- 500gms of Mince Steak
- 1 Onion, large
- Tin of Kidney Beans
- Packet of Mexican Taco Seasoning
- Lettuce
- Carrot
- Tomatoes
- Tomatoes Canned
- ½ Cup rice
Method
Dice the onion roughly, and sauté lightly
Brown the mince
Drain and add the Kidney beans
Add the packet of taco seasoning
Chop the tomatoes roughly and add
Add the tinned tomatoes
Grate the carrot finely and add
Stir and simmer gently till beans are cooked through
Meanwhile cook enough rice for 4.

Chicken Leek & Mushroom Risotto
A great winter meal, and good to freeze and re-heat for lunches, or late meals at night.
- 1 onion
- 1 Tspn Garlic
- 400 grams Chicken, cubed
- 1 Tspn garlic
- 2 cups Aborio Rice
- 1 Litre of Chicken Stock
- 1 Leek
- 200 gms Mushrooms
- Lemon rind
- Baby Spinach
Method
Sauté onions & garlic
Brown chicken
Add rice and heat through
Add chicken stock and bring to boil, once boiled, simmer still rice is cooked
Sauté Mushrooms and Leek and add to dish while serving on a bed of baby spinach
Grate lemon over risotto

Tuna Pasta with, Cherry Tomatoes, Chilli, Spring Onions & Spinach
Ingredients
- 1 can Tuna.
- 150gms Pasta.
- 200gms of fresh Cherry Tomatoes.
- Garlic tspn.
- Chilli to taste.
- Springs Onions, 6 to 10.
- Baby Spinach, handful.
Method
Cook Pasta, chop cherry tomatoes in halves, dice, spring onions.
When pasta is nearly ready, add garlic, cherry tomatoes chilli & tuna to a fry pan & sauté lightly.
Add to pasta and stir through.
Add to plate/bowl on top of baby spinach.
Serves 2.

Chicken, Bacon, Chilli pasta
Ingredients
- 1 breast Chicken
- 3 rashers Bacon
- Chilli, to taste
- 75 gms Pasta, per person
- 1 Med. Onion
- 1 Tspn Garlic
- 1 Tbsp, Tomatoe Paste
- 1 Jar of Leggo's tomatoe, sauce, or equivalent
- 1 Tin diced Tomatoes
Method
Trim bacon fat, chop into small pieces, and cook. Set aside.
Cut breast into small cubes, and cook. Set aside.
Chop onion, fry till, translucent, add chilli and garlic, heat through, then, add, bacon, chicken to pan with Tomatoe sauce, diced tomatoes and tomatoe paste. simmer, while pasta cooks.
Cook pasta at the same time, when all is cooked, add to a bowl, with, Spinach, or some other greens [optional]

Lamb Curry
Ingredients
- Lamb Back Strap 200~300 gms
- 1 onion
- 1 can of tomatoe soup
- 1 can of coconut
- ginger
- fresh chilli
- cummin
- tumeric
- coriander
- garlic
- rice
Method
Slice meat, and onions.
Heat oil, in pan.
Add onion
Add meat
Add soup, and spices.
Simmer until done.
Cook rice

Easy Cheesecake Desert
Ingredients
- 200 to 300gms frozen fruit
- 1/3 Cup Caster Sugar
- 10 Biscuits, plain Hob Nobs, by McVitties are are good
- 1 small lemon
- 250gm tub of spreadable cream cheese
- 300ml tb thickened cream
Method
Place berries in a bowl with 2 tablespoon of caster sugar
Break biscuits into crumbs, using either a blender or crushing with a rolling pin
Finely grate lemon, then juice. Using an electric mixer beat cream cheese till smooth. Add lemon rind and juice. Beat for 30 seconds or until smooth. Add remaining sugar and 1/2 the cream, beting until just combined.
Whip remaining cream to soft peaks. Place 1/2 the berry mixture in the base of 6 x 1cup capacity glasses, or use parfait glasses. Dollop with 1/2 the cream cheese mixture. Repeat on the top layer and sprinkle the top with biscuit crumbs. Add whipped cream and serve.

Honey Soy Salmon
Ingredients
- salmon 1 piece per person
- 1 tablespoon olive oil
Honey Soy Marinade
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- soy sauce (80 mL)
- honey (115 g)
Method
Combine, Honey, Soy, Garlic, set to one side
In a medium pan, heat oil. Add salmon to the pan.
Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.
Pour marinade over Salmon
Serve the salmon with sauce and a side of veggies. We used broccoli.
Super Fluffy Pancakes
Ingredients
- 1 eggs
- 25gms caster sugar
- 175ml milk
- 235gms plain flour
- 1g salt
- 5 gms baking soda
- 7.5 gms cream of tartar
- 15gms butter
Method
In a bowl add the eggs, sugar, and part of the milk and whisk until the sugar dissolves.
Sift the flour and continue whisking adding the rest of the milk. Add the salt, baking soda, cream of tartar, and butter (melted) and mix well.
Heat a pan with some melted butter in it and pour in the batter with a ladle or with a measuring cup. When the batter bubbling on top, flip over to cook on the other side.
Serve garnished with your favourite toppings, we use Raspberries, Blueberries and strawberries and Maple Syrup.
Top ↑BBQ Pork Marinade
- 1 TSPN Garlic
- 2 TSPN Ginger
- 1 TBSPN Sweet Chili Sauce
- Juice of one Lime
- 1 TSPN Soy Sauce
Savoury Mince
- 1 brown onion, finely chopped
- 250g Beef Mince
- 1 tbsp instant beef gravy powder
- 1 cup tomato puree
- 1 cup cold water
- 150g red royale potatoes, peeled, diced(optional)
- 150g carrots, peeled, diced
- 100g button mushrooms, quartered
- 150g (1 cup) of frozen peas and corn
- Rice
Method
Heat oil in a saucepan over medium-high heat. Add onion and mince. Cook, stirring with a wooden spoon to break up mince, for 6 to 8 minutes or until browned. Add gravy powder, tomato puree and cold water. Stir to combine.
Add potato and carrot. Season with salt and pepper. Cover. Bring to the boil. Reduce heat to medium-low. Simmer, stirring occasionally, for 20 minutes or until potato is just tender. Add mushrooms and pea mixture. Cook for 5 minutes or until heated through. Serve with rice.
